Almond Poppy Seeds

Almond Poppy Seed Cookies


– 1⁄2 cup sugar
– 1⁄2 cup firmly packed brown sugar
– 1⁄2 cup (1 stick) butter or margarine, softened
– 1 egg
– 1⁄2 teaspoon almond extract
– 1-2⁄3 cups all-purpose flour
– 2 tablespoons poppy seeds
– 1 teaspoon baking powder
– 1⁄4 teaspoon salt
– 1⁄2 cup chopped, unblanched almonds


– Place sugar, brown sugar, and butter in bowl. Attach bowl and flat beater to mixer. Turn to Speed 4 and beat
1 minute. Continuing on Speed 4, add egg and almond extract and beat 1 minute. Combine flour, poppy
seeds, baking powder, and salt. Turn to Stir Speed and add flour mixture, beating just until combined.

– Shape into 1-inch balls, roll in chopped almonds and place on greased baking sheets. Bake at 375°F for 10 to
12 minutes or until lightly browned. Cool on wire racks.
Makes 2-1⁄2 dozen cookies
