Samantha Nunes – Pastry Chef, Goa Marriott Resort & Spa tells you how you can whip up colourful macaroons using a KitchenAid stand mixer.
INGREDIENTS:
– Egg white 90 grams
– Almond powder 250 grams
– Castor sugar 220 grams
– Icing sugar 250 grams
– Water 50 ml
– Egg white 80 grams
METHOD:
– Simmer castor sugar and water until it liquidizes
– Beat egg whites until light and fluffy
– Now add the hot liquid, to the egg whites, continue beating, until it stands in firm peaks
– Mix the icing sugar into the almond powder along with the egg whites
– Now slowly start folding the meringue into the above mixture
– Pipe the macaroons onto the tray, rest for 15minutes
– Bake in pre-heated oven at 1400C for 25 minutes
– Cool and sandwich with choice of filling
