Masterclass with Chef Bhasin

MASTERCLASS WITH CHEF BHASIN

KitchenAid Masterclasses are a great way to learn some delicious recipes, interact with great Culinary Artists and see some very interesting KitchenAid products in action. 16th April 2016, had a beautiful culinary evening as Trident, Bandra Kurla hosted the KitchenAid team and more than 130 food lovers!

The evening was embraced by Chef Ashish Bhasin’s cooking and our enthusiastic audience. On popular demand, we have all the recipes from that session. Hope you enjoy cooking and eating 🙂

 

GAZPACHO

GAZPACHO

 

INGREDIENTS: 

– Ripe Tomatoes: 500 gm

– Red capsicum: 80 gm

– Green capsicum: 65 gm

– Cucumber: 65 gm

– White bread: 25 gm

– Cumin seeds: 3 gm

– Olive oil: 120 ml

– Balsamic vinegar: 60 ml

– Salt: 3 gm

– Water: 300 ml

– Tomato juice: 400 ml

 

METHOD: 

– Roughly cut tomatoes, cucumbers, red peppers and capsicum

– Marinate vegetables and bread with olive oil, balsamic vinegar, tomato juice and cumin for 2 hours

– Put all the ingredients in your KitchenAid Diamond Blender and adjust thickness with water

– Season the soup with salt and serve cold

 

 

HOME-MADE PASTA DOUG

HOME-MADE PASTA DOUGH

 

INGREDIENTS:

– Refined flour: 500 gm

– Egg yolk: 24 nos.

– Salt: 5 gm

– Extra virgin olive oil: 10 ml

 

METHOD:

– Sift the refined flour using a drum sieve, add salt and mix it up well

– Put the flour in the bowl of KitchenAid Stand Mixer. Place it on the base and secure properly

– Separate the egg yolks from the egg whites and add the yolk to the flour. Use the dough hook attachment of KitchenAid Stand Mixer and start kneading the dough at a low speed

– Add olive oil half way through to ensure the everything mixes well

– Knead the dough till all the flour is absorbed by the eggs and the dough is uniform.

– Rest the dough for a while and remember to keep it covered to prevent it from drying

– Get the desired pasta shape with the help of the KitchenAid Pasta Attachment.

 

 

PASTA WITH TOMATO SAUCE AND ZUCCHINI TEMPURA

PASTA WITH TOMATO SAUCE AND ZUCCHINI TEMPURA

 

INGREDIENTS:

– Pasta: 120 gm

– Garlic: 10 gm

– Parsley: 2 gm

-Salt:  2 gm

– Tomato sauce: 80 ml

 

INGREDIENTS: For tempura batter

– Zucchini: 20 gm

-Asparagus spear:  1 no.

– Olive oil: 20 ml

 

METHOD:

– Blanch the pasta in salted boiling water

– Heat the olive oil and sauté sliced garlic and add blanched pasta to it

– Add seasoning and chopped parsley

– Heat the tomato sauce and add at the base

– Put sauce on the plate and toss pasta over it

– Slice the zucchini with the turning slicer and dust it with tempura flour and deep fry

– Place the zucchini tempuras over the pasta and serve immediately

 

 

MACAROONS

INGREDIENTS: For meringue

– 250 gm Sugar

– 85 gm Water

– 90 gm Egg whites

 

INGREDIENTS: For paste

– 250 gm Almond powder

– 250 gm Icing sugar

– 90 gm Egg whites

 

METHOD:

– Cook 90 gm sugar and water to soft ball stage at 116 °C (in case you do not have a sugar thermometer, you can also use a glass of room temperature water and check the readiness of the syrup by pouring it into the water. If the syrup turns into a soft ball, it is ready to use)

– Start whipping egg whites in the bowl of a KitchenAid Stand Mixer fitted with a whisk on medium speed until they can hold the soft peaks

– Slowly pour the heated syrup into the eggs and continue to whip the mixture till it turns into a soft glossy texture

– You can add a colour of your choice to this mixture (optional)

– Mix the meringue and the other ingredients using the cut and fold method. Make sure you do not over mix

– Pipe the above mixture on Silpats

– Hit the tray against the table once to get rid of all the bubbles

– Rest the mixture for 60 minutes in a dry place till the crust begins to form

– Bake the above for 10 minutes at 165 °C
