MUSHROOM, GARLIC GREENS & WALNUT SOUP

Soul satisfying, rich and creamy this simple Mushroom and Garlic Greens and Walnut Soup is pure comfort food for winter. Serve with oven baked wedges, crumb fried chicken or fish, crusty bread, maybe a green salad to make a hearty meal. Else just have a big filling bowl of soup to keep super light. Either which ways, it’s one of our favourite winter soups when mushrooms and garlic greens are in excess supply.

Time Taken: 45 minutes {plus cooling}            Serves: 2 cups

PRODUCTS FEATURED:

KitchenAid Pro Line Cordless Hand Blender

INGREDIENTS:

- Onion (quartered): 1 no.

- Garlic greens (roughly chopped): 2 stalks

- Button mushroom (quartered): 200 gms

- Small potato (diced): 200 gms

-  Milk: 500 – 600 ml  {approximately}

- Salt: to taste

- Ghee/clarified butter: 1 tablespoon

- Walnuts (chopped): 1/2 cup

- Extra virgin olive oil to drizzle over

METHOD:

- Place onions and garlic greens in the small jar of KitchenAid Pro Line Cordless Hand Blender.

- Process the veggies at high speed until finely chopped, approximately 1 minute.

- Heat the ghee in a heavy bottom pan. Add the onion and garlic greens and sauté for 3-4 minutes.

- Add the mushrooms and potato and sauté for a minute.

- Add milk and cook over low heat until the potato is soft, about 15-20 minutes.

- Take off heat and leave to cool a little. Puree with an immersion blender once it’s cool enough to do so.

- Adjust seasoning if required. Add the chopped walnuts, also more milk if you wish to make the soup thinner, and simmer for 5 minutes to rewarm.

- Serve in bowl with walnuts and garlic greens as garnish
