LEMON CHIA SEED MUFFINS

Chia seeds are a magic ingredient that I love to work with. Lemon muffins, that is one of my favorite dessert is usually loaded with butter and sugar. I decided to play around with my favorite lemon recipe muffins and make it healthy. I replaced butter with olive oil and added chia seeds to it. They’re still fluffy and flavourful. To make things better, they’re also healthy now!

RYE BUNS

For all those who argue that healthier stuff doesn’t taste as good as the ‘real’ stuff, I would say – please try these Rye Flour Buns! Low in gluten content and a native of Europe, you can now find rye flour very easily in India in most health food stores and supermarkets. Here, I’ve gone with a mix of bread flour and light rye flour in 70-30 ratio to give this bread a lighter texture. And if you belong to the aforesaid group that isn’t one to opt for whole foods, I’d say this is a great way of incorporating a healthy ingredient into a beautiful dinner bread roll. As for me, I love the earthy taste that rye flour gives this bread and can tell you that it pairs really well with jams, soups or even pasta!

GONDHORAJ SOUFFLE

Gondhoraj lemon is a very aromatic lemon from Bengal the nearest comparison of which can be the quintessential Thai ingredient which is the Kaffir Lime. This lemon is one of my favourite because of its refreshing scent and is commonly used in Bengal to flavour lentils and curries. Making a cold soufflé out of this lemon seemed an interesting combination to me. This recipe is a cold soufflé made out of gondhoraj lemon for which kaffir lime can be alternatively used.

I’ve been using the KitchenAid Pro Line Series, 5-Speed Cordless Hand Blender for a year now and while most people look at it as being a luxury, today, I’m going to tell you my honest thoughts about using it over the last one year. Sure, if you use price to define luxury, then yes, this would certainly be a luxury. But ours is mostly a value-conscious society, we look for ‘value for money’ deals more than those at cheaper price points. Almost all of us now have blenders and hand blenders at home, making a hand blender quite indispensable. In a constant struggle for space in a city like Mumbai, I know friends who have managed to do away with the traditional blender in favor of hand blenders to save on counter space.
