Apple is a great ingredient to add to the salad bowl. I love the way it pairs with just about anything you have on hand. I like to use tart green apples, finely sliced sometimes with another fruit. This time around, with persimmons flooding the market, it seemed a good time to add these in with the apples. Since the salad is very simple, use quality ingredients for best taste.

INGREDIENTS:
– Green apple: 1 no.
– Lime juice: 1 teaspoon
– Fuyu persimmon: 1 no.
– Pomegranate pearls: 1 cup
– Iceberg lettuce (torn roughly): 1/2 cup
– Rocket leaves: 1/2 cup
– Walnuts (toasted): 1/4 cup
INGREDIENT: For Dressing {makes about 1 cup}
– Extra virgin olive oil: 1 cup
– English mustard: 1 teaspoon
– Honey: 1 tablespoon
– Juice of 1/2-1 lime
– Sea salt
METHOD:
– Using the KitchenAid Box Grater, slice the apples fine {mandolin blade}.
– Toss in lime juice & store in the handy container that comes with the Box Grater.
– Halve and slice the persimmon with the KitchenAid Knife.
– Layer a bowl with salad greens. Toss the other ingredients for salad in another bowl.
– Drizzle over as much dressing as per taste, toss gently to mix. Put in the bowl over salad greens. Serve immediately.
METHOD: For Dressing
– Place all ingredients in a bowl and whisk to mix with the KitchenAid Utility Whisk.
– Taste and adjust seasoning as required.
Note: The salad dressing makes a larger amount. Store for use later. For a twist of taste,
you could add minced garlic etc if you like.
