Walnut Tart

Our Chef of the fortnight, Chef Neha Lakhani, Owner at Patisserie Royale and Faculty at Le Cordon Bleu Centre, GD Goenka University shares with us her favourite recipe, a delicious Walnut Tart.

Preparation time: 30-45 mins .
Baking time 45-50 mins at 180*c

INGREDIENTS

For the sweet paste
– Icing Sugar 140 gms
– Butter 200 gms
– Egg Yolks 6
– Flour 400 gms
– Salt 6 gms
– Flour for rolling
– Butter for greasing (optional)
For the filling
– Sugar 250 gms
– Honey 500 gms
– Vanilla 5 gms
– Salt 5 gms
– Soft Butter 60 gms
– Egg 330gms
– Flour 100 gms
– Walnuts 250-400 gms

METHOD:
– First prepare the sweet paste by creaming the sugar and the butter well in the KitchenAid stand mixer using a paddle attachment….then add the egg yolks one by one , also scrape the sides well…and now add the flour and salt and mix well and Plastic wrap it flat and let it chill.
– Prepare the filling
– First add sugar, honey and salt in a sauce pan and bring to heat just until the sugar melts and mixes well with the honey. Let it cool
– Till it’s cooling, whisk the eggs a little in the KitchenAid Stand Mixer, using a whisk attachment and while whisking, add in the slightly cooled honey mixture
– Now add the butter and vanilla. Mix till the butter has melted and evenly dispersed
– Add walnuts to this mixture
– Now roll the sweet paste onto a tart mould and pass a docker. Pour this mixture on top and bake for 40-50 mins at 180 C until a nice caramel colour and let it cool well to set- First add sugar and honey and salt in a sauce pan and bring to heat just until the sugar melts and mixes well with the honey and let it cool

TIPS:
– When adding honey and sugar mixture to eggs, keep whisking and make sure the honey is warm and not hot else the eggs will scramble

– If u feel unsure, feel free to grease the tart mould with butter
– When chilling the sweet paste do not make a ball to chill, always make a thin flat sheet

IDEAS/SERVING SUGGESTION/ DECORATIONS:
– Can replace the walnuts with pecans
– Can add a little almond powder to the mixture
– Can serve with cinnamon ice cream or can sprinkle some cinnamon powder on top before serving
